Cilantro Lime Sweet Potatoes

Delicious, spicy and truly amazing side dish!

I made a batch and served it over a bowl of organic brown rice for a delicious, light vegetarian meal!

Give this recipe a try:

Ingredients:

  • 2 lb sweet potatoes, peeled and cut into bite-sized squares
  • 2 tablespoons organic, unfiltered extra-virgin olive oil
  • Himalayan salt and black pepper 
  • 1/4 teaspoon cayenne (red pepper)
  • Lime zest from 1 lime
  • 1 tablespoon organic, unfiltered extra virgin olive oil
  • Lime juice from 1 lime
  • 1/2 cup chopped fresh cilantro

Directions:

Place potatoes in a large casserole dish and pour 2 tablespoons olive oil over.  Sprinkle with Himalayan salt and pepper and stir.  Bake in 425 oven for 25 minutes.

While potatoes bake, whisk remaining ingredients (besides cilantro) in a bowl and set aside.

When potatoes are done, place in a large bowl and add all ingredients to them.  Stir gently, then place in a serving bowl.

PS - These have a spicy kick; to make them lighter simply omit the red pepper.
