Delicious, spicy and truly amazing side dish!
I made a batch and served it over a bowl of organic brown rice for a delicious, light vegetarian meal!
Give this recipe a try:
Place potatoes in a large casserole dish and pour 2 tablespoons olive oil over. Sprinkle with Himalayan salt and pepper and stir. Bake in 425 oven for 25 minutes.
While potatoes bake, whisk remaining ingredients (besides cilantro) in a bowl and set aside.
When potatoes are done, place in a large bowl and add all ingredients to them. Stir gently, then place in a serving bowl.
PS - These have a spicy kick; to make them lighter simply omit the red pepper.
