This one I made last week and used packaged organic cooked spaghetti squash I found in the cold section at my local Costco...such a time-saver!
But I would cook it up to make this recipe again - even my husband, who is a meat-lover, enjoyed this warm salad.
Throwing lots of kale and garlic in it makes it super-healthy and vegan is always good!
Here's the recipe:
Mediterranean Spaghetti Squash Salad
Sautée onion and garlic in olive oil on medium high until lightly cooked, about 5 minutes.
Add kale, seasonings, and lemon and cook another 3 minutes.
Add squash and tomatoes and cook just until warmed.
Sprinkle with cheese (optional).
