It really doesn’t look very appetizing, and I share REAL pictures, not staged ones...which doesn't help the visual BUT this salad is SO, SO TASTY (and so, so healthy!)!

This is perfect lunch for Leg Day because of the healthy fat (avocado) and protein (eggs) balanced with lots of greens (kale) that you can also sub spinach for.
I am absolutely addicted to it, and enjoy it anytime I don’t want leftovers for lunch!
Warm Kale and Beet Salad Recipe 🏼
Sauté the garlic in a little organic EVOO on medium heat till toasted, about 2 mins. Add the kale and a sprinkle of water and cover and cook till just wilted, about 2 minutes. Add beets and cook just till warm. Plate kale mixture and top with avocado, fresh lemon juice, eggs and seasonings.
This recipe is a bold one with tons of whole food nutrition and pungent flavor - if you try it, you have to let me know what you thought!
